Arroz con Habichuelas Guisadas (Puerto Rican Stewed Beans with Rice)

Ingredients
1 can pink or red beans (drained and rinsed)
2 tablespoons Sazón de Casa Sofrito
1 packet Sazón (optional)
1 teaspoon adobo
1 tablespoon tomato sauce
1 tablespoon olive oil
1 small potato, diced (optional)
1 cup water or chicken broth
Salt to taste
Instructions
Heat olive oil in a medium pot.
Add 2 tablespoons of sofrito and cook for 1 to 2 minutes.
Add tomato sauce, sazon, and adobo. Stir.
Add beans and mix well to coat them in the seasoning.
Add potatoes and water or broth.
Bring to a simmer for 15 to 20 minutes until thickened.
Serve over white rice.
Perfect for: family meals, meal prep, and quick dinners.
